Recipe for the yuca bread (Pan de yuca)
2 ½ cups yuca starch (aprox. 350 gr)
4 cups grated mozzarella cheese (aprox. 500 gr)
1 tsp baking powder
¾ teaspoon of salt
2-3 tablespoons of sugar
Half a stick of melted butter (aprox. 50gr)
2 large eggs
2-4 tablespoons of milk
Preheat oven to 175 °C.
In a bowl combine the yuca starch, cheese, baking er, sugar and salt. Mix well.
Add the butter and eggs. If the mixture is too dry add a little milk.
Mix until small dough balls begin to form.
Knead dough into small balls. Don’t worry if the dough is crumbly, you will still manage to form the bread balls. I prefer them small because they look nicer, however you can choose to do them bigger.
Butter a flat baking pan. You can also use baking paper.
Place the yuca bread in a pan and bake for about 15 minutes. If the bread pieces are larger it may take 5 to 7min longer. Keep checking, don’t let the bread brown too much.
You can make the dough ahead and store in the refrigerator for up to a day.
